Celebrate National Food Day today with some healthy meals! I’m having an egg vegetable scramble for breakfast, garden salad with salmon for lunch, and sesame beef stir fry for dinner (see recipe below). Remember to include a healthy portion of vegetables with every meal today.

Try this delicious recipe for National Food day:
Sesame Beef Stir Fry (makes 2 meals)
1 LB beef cut into bite sized pieces
1 TBS coconut oil
1 carrot chopped
2 celery stalks chopped
1 red pepper, chopped
1 cup shredded green cabbage
1 cup sliced mushrooms
1 clove garlic chopped or minced
1 tsp onion powder
1/2 tsp ground ginger
1/2 tsp red pepper flakes
¼ cup soy sauce
1-2 tsp sesame seeds
In large skillet warm coconut oil. Sear beef on all sides over high heat. Remove beef from skillet. Reduce heat to medium and add carrot, celery, red pepper, garlic and mushroom and sauté till vegetables begin to soften (about 6 minutes). If vegetables stick to pan add some coconut oil. Add cabbage and continue to sauté till it softens. Add rest of ingredients and sauté with the meat for additional 3-4 minutes. Make sure meat is at desired temperature and vegetables at desired consistency.
